Where this coffee comes from

Smallholders around Bensa deliver ripe cherries to one washing station at 2,000 m. The coffee is fermented for 48 hours, washed and dried on raised beds for about two weeks. We have bought this lot for three harvests.

How Mara brews it

Coffee: 15 g, ground medium-fine
Water: 250 g at 93 C
Bloom: 40 g of water for 45 seconds
Pour: Slowly, in circles, to 250 g
